Recipe - Cricket Powder Red Velvet Cupcakes

In honour of Valentine's Day, we have created a delicious cricket powder red velvet cupcake recipe that you can enjoy with your significant other, friends, and family!

This is the perfect opportunity for you to satisfy your sweet tooth cravings, while still getting lots of nutrients due to the addition of cricket powder to this traditional recipe.

Ingredients

For the cupcakes:

  • 2 cups All-Purpose Flour
  • 1 cup sugar
  • 1 tbsp cocoa powder
  • 1 tbsp cricket powder, which you can get on our website here
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegan buttermilk (1 cup almond milk + 1 tbsp lemon juice)
  • 1/3 cup Extra Virgin Olive Oil
  • 2 tsp vanilla extract
  • 2 tbsp Red food die
  • 1 tbsp white vinegar
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp hot water)

For the cupcake icing:

  • 3 cups powdered sugar
  • 1/3 cup vegan butter
  • 3 tbsp almond milk
  • 2 tsp vanilla extract 

Instructions 

For the cupcakes:

  1. Preheat your oven to 350°F (180°C).
  2. Sift the flour into a mixing bowl. Sift the cocoa powder into the same mixing bowl. Add the sugar, baking soda, salt, and cricket powder.
  3. Prepare the vegan buttermilk by combining the almond milk and the freshly squeezed lemon juice. Let it sit for a few minutes, it should curdle a little.
  4. Prepare the flax egg by combining the ground flaxseeds and hot water. Let it sit for a few minutes, it should thicken.
  5. Add the vegan buttermilk, flax egg, oil, white vinegar, and red food die to the mixing bowl. Whisk the ingredients by hand until you obtain a smooth batter. 
  6. Line a cupcake tray with 12 cupcake liners, and pour the batter evenly between them.
  7. Place the cupcake tray into the oven, and bake for 25 minutes.
  8. Let the cupcakes cool down before adding the icing.

For the cupcake icing:

  1. Add all the ingredients to a mixing bowl. Whisk the ingredients using an electronic whisker until the frosting is thick and smooth. You may need to add a little bit of almond milk if your frosting is not creamy enough.
  2. Frost the cooled cupcakes.
